Propriété de Chanel, tout comme le Château Rauzan-Ségla, il est niché sur le plateau calcaire de Saint-Émilion, Château Canon est une propriété emblématique qui jouit d’un terroir d’exception le consacrant, dès 1954, 1er Grand Cru classé. Son vignoble d’un seul tenant d’une surface de 34 ha repose sur un plateau calcaire à astéries et veines d’agrile. Son encépagement est constitué de merlot (70%) et cabernet franc (30%).  Les vendanges sont réalisées manuellement, la vinification est parcellaire, chaque parcelle est mise en cuve séparément, par gravité. L’élevage s’effectue en barriques de chêne français pendant 18 à 20 mois.

Le Château Canon offre à chaque millésime des vins d’une extrême finesse, racés et voluptueux.

Le domaine produit également un second vin « Croix Canon ».
